Welcome to the Aspen Grille!

This year the Aspen Grille is "greener than ever." With the help of Specialty Crops, we have a greenhouse where we are growing over 20 varieties of lettuce for use as our "Carbon Neutral Salads." We bike the greens to the Grille, so we use no fossil fuel in the production. And, they are great salads!

We are also very proud to announce that the Grille has been certified by the Green Restaurant Association as a "green restaurant." We have completed steps to acheive this certification, with many more to come. Eco-friendly menu paper, energy efficient grills, biodegradable cleaning products, and low flow faucet aerators. We are now one of only two restaurants in Colorado to be designated as a "green restaurant."

The Aspen Grille is a student-run restaurant located in the University Club, on the upper level of the Student Center. The Aspen Grille is open to the public Tuesday through Friday during the academic year.

The Aspen Grille will, whenever possible, use local food products. For example, Hi Ho Sheep Farm in Windsor supplies our lamb and Hazel Dell Mushroom Farm grows our mushrooms south of Fort Collins. Our beef is raised by two generations of CSU graduates and ground to our specifications. Long Family Farms in Eaton raises free-range pigs for bacon and pork products. In season, the greens, vegetables and herbs are grown in our garden here on campus with the help of the Specialty Crops Program. Local bakers produce craft breads and Cafe Richesse, owned by a Colorado State University Alumnus, roasts "socially conscious" coffee.

Reservations

We have limited availability for groups of 4 to 6 and reservations are strongly suggested.

In addition, we cannot take a reservation for a group larger than 6 in our dining room.

Although the Aspen Grille is a fine restaurant, it is, first and foremost, a classroom. All positions are staffed by students who rotate through the various employee service and kitchen positions, as well as the position of manager. This results in every student being trained in a new position each week. This, combined with a small dining room and limited seating, creates operational and training challenges not faced by a traditional restaurant.

With notice, a private dining room can be reserved, in collaboration with Lory Student Center Catering, for groups of 7 to 14.

For reservations please call between  10 a..m. and 2 p.m., Tuesday - Friday, (970) 491-7006.
